Header Breakout Sessions

“An island can be a microcosm of the larger world but is often experimental ground for alternative realities and shifts in evolution,” Gisela Williams writes in the new Design Hotels Book. On Friday, we will venture out to learn from Crete's circular concepts first-hand—and you decide where your journey leads.

Off-site Session Options- Each participant chooses one

Antonis Farsaris’s Bakery
A well-known character on the island, Antonis Farsaris left his job as a successful hotel manager to bake traditional Cretan bread, installing a wood-fired oven in an old industrial workshop belonging to his father. Now, he sells his artisanal loaves to locals, hotels, and restaurants, including the Minos Beach Art Hotel. In our session with Farsaris, we will learn about traditional baking methods and his transition to a way of being that is deeply rooted in the island’s heritage.

Kritsa Women’s Cooperative
Set in a charming village, this small traditional bakery is run by a dozen local women. More than a way to earn some extra money, the cooperative is a lively hub where members keep Cretan culinary heritage alive through the collective act of baking family recipes by hand. We will spend time in the kitchen to learn about the island’s traditions from Maria, one of the bakers, and taste some of their finished products.

Phāea Farmers
Spearheaded by Phāea Resorts, the group behind Cretan Malia Park, the Phāea Farmers initiative purchases products from small farmers and offers training to help improve the quality of their land. In addition to supporting farmers, many of whom are hotel employees, this circular system leads to higher quality products. We’ll also learn about the region’s special microclimate and its iron-rich soil, which may be why the remarkable Minoan civilization grew out of this land.

Sculpture Garden tour at Minos Beach Art Hotel
The G. & A. Mamidakis Foundation has created a valuable collection of contemporary art over the years, containing seminal works by leading Greek and international artists, such as Vlassis Kaniaris, Nikos Alexiou, George Lappas, Giorgos Gyparakis, and Rena Papaspyrou. The Sculpture Garden presents the monumental sculptures and art installations that were created during a series of symposia held at the hotel. The tour is led by Gina Mamidakis and Art Director Yota Dimitriou.
