Step back in time to where life rolls along at a languid pace, the fields are ripe with olives and vines, the landscape is dotted with whitewashed houses, and the pool reflects the vivid indigo of the sky. At Torre de Palma Wine Hotel in Portugal’s Alentejo region, first-time hoteliers Ana and Paulo Barradas Rebelo pay homage to the adage “to live like Romans”. The former pharmacists have all the ingredients that make for good living: elegant interiors in perfect harmony with nature, wine tastings from the hotel’s own 14th-century vineyard, an indulgent spa, a restaurant that will take you on a journey through Alentejo’s best delicacies, and an inspired renovation by the celebrated architect João Mendes Ribeiro. Ride a Lusitano horse, watch a movie, swim indoors or outdoors, or run through the property’s orchard . . . whatever you do, this is glorious isolation at its best and you couldn’t be in better hands.

Paulo Barradas Rebelo & Ana Isabel Rebelo

History trumps experience. If that sounds like a contradictory statement, then you haven’t met Paulo Barradas Rebelo and Ana Isabel Rebelo. The duo trained as pharmacists—they fell in love while in pharmacy school—with Paulo going on to become an executive at Bayer, yet they had no hotel experience. What they did have, however, was a great passion for the region and its rich history. “The Romans came here in the first century,” explains Paulo. “They brought us wine and olive oil, and those things have been right here for 2,000 years. You can literally taste the history!” Ana, meanwhile, stresses a strong connection to the property itself. “We knew the farm was in ruins, but we fell in love with it and felt that it simply had to be saved. And once we took it on, we wanted to do it in a way that respected and celebrated the heritage and history here.”
