    As the name suggest, high-end gastronomy and the stunning landscape of Portugal’s Setúbal District play lead roles at Santiago Hotel Cooking & Nature. Set just 20 kilometers from a beautiful coastline defined by deserted beaches, sublime surf spots, and a wealth of ocean adventures, the hotel is a high-style launching point for the region’s inimitable charms. Indeed, the bigger the appetite you can work up, the better. Inspired by the relationship between humans and the fruits of the Earth, the property's À Terra restaurant creates Portuguese and Mediterranean dishes using a wood or charcoal oven and local ingredients—including produce from the chef’s vegetable garden—and serves them on a terrace with panoramic views of the verdant surroundings. The dedicated concierge service also encourages guests to experience those surroundings with tours to the Roman ruins of Miróbriga, the Badoca Safari Park, and the Lagoas de Santo André and Sancha Natural Reserves, as well as organizing cooking classes and outdoor activities. Traditional materials and crafts by local artisans embellish the interiors, while each of the 32 guestrooms boast a balcony with views to Santiago do Cacém’s historic city center. To top it off, Santiago Hotel also features a private event space for up to 50 people; a boutique grocery store with traditional culinary craftworks and local products; and an outdoor lounge and Zen area by the pool, making it the perfect place for work, play, and relaxation.

    The 32 rooms and suites range from 24 to 40 square meters, and each boasts a balcony with views of Santiago do Cacém’s historic city center. While the 24-square-meter Double Room and the 40-square-meter Suite feature a king-size bed, the former is home to a bathtub and the latter both a bathtub and a shower. The 24-square-meter Twin Room offers twin beds and a bathroom with either a bathtub or a shower.

    Francisco Moser

    It could be said that Francisco Moser is “book smart” in two different ways. There’s the bookwork he did while earning undergraduate degrees in hospitality—including those from the Porto School of Hospitality and Tourism and the Estoril Higher Institute for Tourism—as well as for his postgraduate degrees in Accounting and Finance at the Catholic University of Portugal, another in Digital Marketing, and a master’s degree in marketing. But Moser is also a student of the industry he loves, counting books by the great New York City restaurateur Danny Meyer and by Isadore Sharp, the founder of Four Seasons Hotels and Resorts, among his favorites. “I like to read books by and about people who look at the hospitality industry in a different way,” he says. Like all great thinkers, Moser is constantly asking questions—How to be different? How to look to the future? How to provide guests with what they are looking for?—and then he answers those questions with his own hotels.
