Today, that mission has been accomplished. She juggles the Fresh Hotel with two smaller retreats on the island of Samos in the northern Aegean Sea. Yfanti also runs the olive oil company Esti with her husband. And, oh yes, she is the mother of two. It’s a testament to Yfanti’s precocious good taste that Fresh Hotel is not only a fixture on the Athens skyline, but a regular talking point among the artists whose work adorns the property’s walls.
Opened just in time for the 2004 Olympic Games, Fresh Hotel is a product of local architects Zeppos, Georgiadi + Associates, who have made the city a touchstone in the hotel’s contemporary design scheme: the rooftop is forested with olive trees; stunning views of the nearby Acropolis are showcased; and the hotel’s Air Lounge Bar and Restaurant is madly popular with young creatives. Fresh allows guests to know and feel that they are in Athens from the inside. Yfanti puts it best when she says: "I simply couldn’t take Fresh, put it in another city, and make it work."
